Whisky is often enjoyed neat, but when paired with the right flavours, it unlocks a whole new world of taste. Join Thy Whisky’s founder and co-owner, Andreas Poulsen, to explore five unique expressions of Thy Whisky, each served alongside carefully curated culinary pairings that embody the essence of Thy—a coastal region in North Jutland known for its raw nature and rich food traditions.
For this special occasion, we are joined by Michelin-starred Restaurant Tri from Agger, Restaurant Lyspunktet from Hanstholm, and several other friends from the vibrant local culinary scene in Thy. This is your chance to experience exceptional ingredients brought to life by the skilled craftspeople behind them, promising a whisky tasting experience unlike any other.
Thy Whisky Distillery is redefining quality by combining world-class whisky, local organic ingredients, and complete traceability. Celebrate Norway’s Constitution Day through gastronomy
To celebrate Norway’s Constitution Day, we’re opening the doors to a culinary afternoon. Get ready for a flavorful experience as Norway steps into the kitchen.
In this special edition of the HTH Live Kitchen, Håkon Solbakk will prepare dishes inspired by the festive foods traditionally enjoyed on Norway’s Constitution Day. Expect classic Norwegian ingredients like rømme (a type of sour cream), fresh herbs, and shellfish, reimagined with a modern touch. Using high-quality Norwegian produce, Håkon will blend traditional flavours with contemporary techniques.
Håkon Solbakk is Head Chef at the exclusive restaurant Speilsalen at Britannia Hotel in Trondheim. A Michelin-starred chef and Nordic Culinary Champion in 2022, he is recognised as one of Norway’s most talented chefs. With six years on the Norwegian National Culinary Team, he is known for his meticulous precision, innovative style, and deep passion for Nordic ingredients.

Learn the techniques behind the famous Tivoli Cake
Learn the art of piping like a true pastry chef with Cakenhagen. Join us in piping and decorating the famous Tivoli Cake, guided every step of the way by our Head Pastry Chef, Sylvain Tarpi, who will share tips and tricks for mastering this delicate craft. You’ll have your own cake to decorate—and, of course, there will be tastings along the way.

Taste Marseille’s world-famous fish soup
Experience an authentic taste of the Mediterranean at Nimb Brasserie, celebrating Copenhagen’s and Marseille’s year of friendship with the classic French fish stew, bouillabaisse.
This flavourful and traditional dish is prepared by La Calanque Bleue, a family-owned restaurant from Sausset-les-Pins in the South of France, who have travelled from Marseille exclusively for this unique evening. The restaurant, founded in 1946, specialises in the traditional Provençal bouillabaisse and has expanded globally through events like the Challenge Bouillabaisse and the upcoming World Bouillabaisse Championship.

Classic French Flavours – Bouillabaisse with Sauce Rouille
Nicolas and Étienne invite you to a culinary journey in the HTH Live Kitchen, where they will prepare classic bouillabaisse—the renowned fish soup from the south of France—accompanied by homemade sauce rouille and sourdough bread.
Their cooking is not only about flavour but also about history and tradition. During this masterclass, you’ll explore the origins of bouillabaisse in Marseille, its importance in French gastronomy, and the carefully selected ingredients that make this dish truly unique.
They will demonstrate the entire process in the beautiful HTH kitchen—from selecting fresh fish and shellfish to achieving the perfect balance of spices, saffron, and stock that gives the soup its distinctive taste. At the same time, they’ll show you how to make an authentic sauce rouille—a creamy, saffron-infused mayonnaise that elevates the dish.
Étienne Lemaître has been a chef at the French Embassy for 22 years, cooking for world-renowned artists, heads of state, and royalty. Before that, he worked in the United States, Switzerland, Poland, and Cyprus.
Nicolas Georges Vahé is a trained chef, chocolatier, and pâtissier. He moved to Denmark in 1998 to work at Falsled Kro on the island of Funen. Since 2006, he has focused on selling gourmet specialties—but now, it’s time for him to return to the simple things: good, honest food made easy.

Joining him in the HTH Kitchen is flair bartender Carmine Liguori, who brings the turquoise Silent Pool gin bottle to life with his show-stopping moves. Carmine is a three-time Italian flair champion, flown in from Bergamo to showcase his skills.

Can’t decide which restaurant to visit in Tivoli Gardens? This special communal dining event offers a unique solution: five restaurants in one meal.
You’ll be served five small dishes, each representing a different culinary style, from Restaurant Paafuglen, Figaro, Kilden i Haven, Nimb Brasserie, and Cakenhagen. This experience is presented as a seated communal dinner in the Communal Tent on the Open-Air Stage.
To complete the evening, we’ll serve coffee from Original Coffee and sweet treats from Lakrids by Bülow.
The event takes place in the Communal Tent by the Open-Air Stage from 18:00 to 20:30. Due to the open design of the double tipi tent, we recommend warm attire.
