Young Head Chef Manuel Ulrich delivers cuisine rooted in classic French tradition, masterfully infused with modern innovation. Ösch Noir's culinary artistry can be experienced in two set menus: the classic “Noir” and the vegetarian “Vert.”
At the Japanese Tower, diners will enjoy the opportunity to relish selections from both menus. The philosophy of Ösch Noir is evident through the use of luxurious produce, including lobster, caviar, lamb, and yellowtail. These are enhanced with dynamic produce like shiso, coriander, kombu, and Amalfi Lemon, crafting inventive flavours.
